Jello Cutout Cookies

I know, you looked at the title of this recipe and thought….”wow, now she’s just lost it”.   It’s time for a fun little recipe that will add variety and color to your Holiday cookies…yep, jello!  The jello replaces most of the sugar in this dough and it adds the flavor.

For this recipe, you can use any flavor of  jello you like.  I used raspberry because I wanted red cookies without having to add all the food color to my royal icing, and I love raspberries!   (Aren’t they pretty? Next time, I’ll try lime jello for little Christmas Trees.)  So here it is, a simple, fun recipe that you and your kids can whip up and enjoy:

Cream:                
3/4 cup Butter, softened
1/2 cup Sugar
Add:
1-3 oz. pkg. Jello
2 Eggs, room temp.
Mix in:
2-1/2 cups AP Flour
1 tsp. Baking Powder
1/2 tsp. Salt

Chill the dough.  Roll out onto a floured surface and cut with your favorite cookie cutters.  Place cookies on a parchment lined cookie sheet and bake in 350 degree oven for 10-12 minutes – don’t let them brown.  Cool and ice as desired. (I also brushed some with water BEFORE BAKING and sprinkled with colored sugar.)
