Oatmeal Peanut Butter Bars

Who doesn’t like a cookie?  Cookies are my family’s favorite treat, but making them can be really time consuming.  My easy solve for that is Bar Cookies.  Nearly any cookie recipe can be spread in a pan and baked as bar cookie.

My mom made these terrific Oatmeal Peanut Butter Bars – I hope you’ll enjoy!

Cream:
½ cup Butter
½ cup Sugar
½ cup Brown Sugar
½ cup Peanut Butter  (Creamy or Chunky)


Add and mix well:
1 Egg
1 tsp. Vanilla


Combine in a bowl and then add to above:

1 cup AP Flour
½ cup Oatmeal, Quick
1 tsp. Baking Soda
¼ tsp. Salt


Spread in a greased 9” X 13” pan.     Bake in 350 degree oven for 25 minutes.

After removing from the oven, while still hot, sprinkle with 1 bag Chocolate chips.  Allow chips to melt, then spread with knife.  Cool.  When cool, drizzle.

DRIZZLE:
Whisk together:
½ cup Confectioner’s Sugar
2 Tabl. Peanut Butter
2 Tabl. Milk
