Scrumptous Pumpkin Pancakes

How often do you get to use the word “scrumptous”?  I know, not often, but really, these pancakes deserve that title!  I developed this recipe yesterday and this morning, my husband and I enjoyed these light, delicious pancakes.  This recipe makes about 10 large pancakes.

Whisk in a large bowl:
1/3 cup Pumpkin (solid – not pie mix)
2 Eggs, whole
2 Tabl. Brown Sugar
3 Tabl. Melted Butter
1 cup Buttermilk*
1/2 tsp. Vanilla

Mix these dry ingredients together and add to the above liquid ingredients:

1 cup AP Flour
1 Tabl. Baking Powder
1 tsp. Baking Soda
1/2 tsp. Salt
1/2 tsp. Cinnamon
1/2 tsp. Ginger
1/2 tsp. Cloves

Whisk together until smooth.  Allow to “rest” on the counter for a few minutes.  Bake on a pre-heated griddle.  Enjoy!

* a little lemon juice to whole milk works just fine!
