Pecan Tea Cookies

Can one cookie have many names?   This very well known cookie is known around the world as Mexican Wedding Cakes, Snowball Cookies, Russian Tea Cakes, and probably more.  Often reserved for the holidays, these nutty, buttery cookies are perfect with tea any time of the year.  Best of all, they freeze for months – so get cracking on making some today!
 

Cream:
1# Butter, room. temp.
1-1/2 cups Powdered Sugar


Gradually add:
1 tsp. Vanilla


Add to above:
4-1/2 cups AP Flour
1 tsp. Salt
1-1/2 cups Pecans, finely ground

Roll into balls and place onto cookie trays lined with parchment paper.  Bake in 350 degree oven for 12-14 minutes.  Cool completely. Roll each cookie in confectioner’s sugar.
