Chocolate Chip (or Chunk) Cookies

My mom’s recipe for “Basic” Chocolate Chip Cookies, is anything but basic…especially if you use quality chocolate chips.  I prefer to use chunk chocolate – since I happen to have 10# of Callebout Chocolate on hand.  Otherwise, use Ghirardelli Chocolate Chips.  This recipe makes 2 doz. cookies – it can easily be doubled (or tripled!).

Cream Well:
1/2 cup Butter, room temp.
5 Tabl. Brown Sugar
5 Tabl. Sugar

Beat in:
1 Egg
1 tsp. Vanilla Extract

Combine in a bowl and then add to above:
1 cup and 3 Tabl. AP Flour
1/2 tsp. Baking Soda
1/2 tsp. Salt

Stir in:
8 oz. Choc. Chips

Roll the dough into rounds and place on parchment sheet lined cookie sheets.  Bake in 350 degree oven for 8 Minutes or until slightly firm in center.
