Gingerbread Cookies

The holidays aren’t complete unless you’ve made and ate some gingerbread man (women too) cookies.  This recipe is delicious – not too strong for the kids, but plenty “gingery” for anyone.

The dough is soft, so be sure to use flour to help roll it out without sticking to the counter. (This dough is not sturdy enough for gingerbread houses.)

Why not make some gingerbread stars or trees too?  Kids love to help make and decorate cookies so make this a family event!

 
Cream:
1-1/2 cups Butter, room temp.
1-1/2 cups Brown Sugar


 
 
 
 
Add:
1-1/2 cups Molasses


Gradually add to above, one at a time:
3 Eggs


 
 
 
 
Add to above:
7-1/2 cups AP Flour
1 tsp. Salt
1-1/2 tsp. Baking Soda
2 Tabl. Ground Ginger
2 Tabl. Cinnamon
2 Tabl. Ground Cloves
 

Chill the dough.  Roll out and cut with gingerbread men/women (whatever) cutters. Before baking, you can add red hot cinnamon candies and press into the dough if you wish.  Bake in a 350 degree oven for 10-12 minutes.  Cool completely.  Ice and decorate as desired.  (Royal Icing recipe is under “Sugar Cookies” in Cookie Category.)
