Pecan Toffee Bar Cookies
Posted by bakingway
The best way to save time when making cookies, is to make bars. Using one baking dish and one baking time, you can end up with a few dozen cookies. At this point in the baking game, if you are tired of making individual cookies, icing, decorating…then try this recipe for Pecan Toffee Bars. They are a little more sophisticated than typical Holiday cookies, but easier to make. This recipe makes a cookie sheet (with 1″ sides) so depending on how you cut, you could get up to 4 dozen cookies. I cut mine into squares and then into triangles because they are rich. For the crust, combine and mix: 3 cups AP Flour 1-1/2 cups Brown Sugar 1-1/4 cup Butter, soft
Firmly press the crumbs into a greased cookie sheet. Bake in 350 degree oven for 5 minutes.
Remove the hot crust from oven and sprinkle with: 3 cups of Pecans Boil for 1 minute: 1-1/3 cups Butter 2 cups Brown Sugar
Pour the toffee mixture above over the pecans. Transfer the cookie sheet tot he oven (350 degrees) and bake for 20 minutes.
Cool for 5 minutes, and sprinkle with 1 pkg. of chocolate chips. After allowing the chips to melt a bit, spread on top. Cool completely and cut into bars. You can easily freeze these in containers.
