Pecan Toffee Bar Cookies

The best way to save time when making cookies, is to make bars.  Using one baking dish and one baking time, you can end up with a few dozen cookies.  At this point in the baking game, if you are tired of making individual cookies, icing, decorating…then try this recipe for Pecan Toffee Bars.  They are a little more sophisticated than typical Holiday cookies, but easier to make.  This recipe makes a cookie sheet (with 1″ sides) so depending on how you cut, you could get up to 4 dozen cookies.  I cut mine into squares and then into triangles because they are rich.

For the crust, combine and mix:
3 cups AP Flour
1-1/2 cups Brown Sugar
1-1/4 cup Butter, soft

Firmly press the crumbs into a greased cookie sheet.  Bake in 350 degree oven for 5 minutes.


Remove the hot crust from oven and sprinkle with:
3 cups of  Pecans 
Boil for 1 minute:
1-1/3 cups Butter
2 cups Brown Sugar

Pour the toffee mixture above over the pecans.  Transfer the cookie sheet tot he oven (350 degrees) and bake for 20 minutes.

Cool for 5 minutes, and sprinkle with 1 pkg. of chocolate chips.  After allowing the chips to melt a bit, spread on top.  Cool completely and cut into bars. You can easily freeze these in containers.
