Peanut Kookie Brittle

Here’s a bar recipe that will add yet another flavor dimension to your holiday cookie platters.  This recipe is a bit “kookie” – not quite a cookie, but not real brittle either.  Those who don’t care for rich or frosted cookies will enjoy these.  Since it makes a whole cookie sheet full of bars, you’ll get approx. 4 dozen.  (Be careful to pay attention to those with peanut allergies.)

2 cups Butter, soft
2 cups Sugar
1 tsp. Salt
2 tsp. Vanilla Extract
4 cups Flour
Stir in:
2 cups cocktail peanuts

Press firmly into the bottom of 1″ sided cookie sheet.  Bake in 350 degree oven for 25-30 min.  Cool for 15 minutes before cutting.  Allow to completely cool before serving/freezing.
