Cranberry Orange Scones

Scones are perfect for New Year’s Day breakfast.  My scones are some where between “biscuit-y” and “cak-y” but way beyond delicious!  Make them today and place them in  refrigerator for tomorrow, to bake off fresh.  This recipe makes 6-8 scones depending on how big you cut them.

Measure into a large bowl and mix:
2 cups AP Flour
1/4 cup Sugar
1 Tabl. Baking Powder
1/2 tsp. Salt
1 Tabl. Orange Zest
1 cup of Dried Cranberries

In a small bowl, whisk together:
1/2 cup Heavy Cream
1 Egg
1/3 cup Butter, melted

Stir the wet ingredients into the dry.  When the dough comes together, dump it out on the counter and knead briefly just to bring it into a nice disk shape about 8″ in diameter.  Transfer the disk of dough onto a parchment lined baking sheet.  Using a large knife, cut it into 6-8 triangles.  Brush the top with heavy cream.  Sprinkle with sugar.  Bake in 350 degree even 22-25 minutes until done.
