Oatmeal Cinnamon Cookies

Every baker should have a great Oatmeal Cookie recipe in their collection.  This is a traditional Oatmeal Cookie with lots of cinnamon and raisins, optional.  Make them small or gigantic (baking times will vary depending on size) adults and kids alike will love them!  This recipe makes 2 dozen large cookies.

Tip:  In the summer, I make them large and sandwich them with Vanilla Ice Cream.  Wrap in plastic until ready to serve.

 

Cream:
1 cup butter, room temp.
1 cup brown Sugar
1/2 cup Sugar 

 

Add:
2 Eggs, room temp.
1 tsp. Vanilla Extract 

 

Mix in to incorporate:
1-1/2 cups AP Flour
2 tsp. Cinnamon
1 tsp. Baking Soda
1/2 tsp. Salt 

 

Stir in:
3 cups Oatmeal (quick – not instant)
1 cup Rasins (optional) 


Scoop or roll the dough into balls.  Gently flatten each ball with your hand or bottom of a glass.  Bake in 350 degree oven:
Approx. 8-10 min. for small cookies and 15-18 min. for giant cookies.
