Peanut Butter, Chocolate Chip Cookies

I’m blogging from my daughter and son-in-laws home watching little Joey.  We are awaiting their arrival home with new baby Evan, born yesterday!  With all the attention going to mom Rachel and baby Evan, and of course we’re doting on Joey, I didn’t want daddy to feel left out.  My son-in-law Steve is an amazing husband and father – and did I mention, lover of the peanut butter and chocolate combination!!  This recipe was a hit with Steve and we baked them fresh today so daddy will know he is special too.  Bake them today for your special loved ones.

In a mixer bowl, cream:
1/2 cup Butter, room temperature
3/4 cup Peanut Butter (creamy or chunky)   * I used reduced fat Pt. Butter
1-1/4 cups Brown Sugar 

Add to the above creamed mixture:
3 Tabl. Milk
1 Tsp. Vanilla Extract
1 Egg, room temperature 

Add to above and mix to incorporate:
1-3/4 cups AP Flour
3/4 tsp Salt
3/4 tsp Baking Soda 

Stir in to the dough:
1-1/2 cups Chocolate Chips (Milk or Dark Chocolate)

Roll the dough into small rounds about 1-1/2″.  Place on parchment lined or greased cookie sheets and bake in a 350 degree oven for 8 minutes.  Do not over-bake cookies or they will be dry.  When removed from the oven, take a flat spatula and flatten the dome of each cookie by pressing down lightly.  Try to resist until they are cool – Enjoy!
