Raspberry Crumb Bars

Sometimes you just need a cookie!  These Raspberry Crumb Bars are quite popular because of their buttery crust and crumbs. Perfect for sharing at a pot-luck dinner or for a special afternoon treat with milk or cup of hot tea!   

This is an adaption of the famous Magnolia Bakery’s recipe which makes 2 dozen small bars.  (If you bake a lot, you’ll question the ingredients, but follow the  recipe – it’s right.)

For The Crust:
Combine in a bowl:
2 cups AP Flour
1 cup Butter, melted

Stir together to form a very soft dough.  Press this dough into the bottom of a 9″X13″ pan.  Bake in 350 degree oven for 15 minutes. Cool completely.


Spread the crust with 1 cup of raspberry jam.

To Make Crumbs:
Combine in a bowl:
1-1/4 cups AP Flour
1 cup Oatmeal (Quick – not Instant)
1-1/2 cups Brown Sugar
1 cup Butter, room temp.

With a fork or your fingers, work the butter into the dry ingredients to form crumbs.  Spread and press the crumbs down on top of the jam.

Bake in 350 degree oven for 25-30 minutes or until golden brown.  Cool.  Cut into squares to serve.
